To make this beautiful and delicious cake, you will just need 3 layers of sponge cake, a bit of whipped cream and some strawberries... And that's it! It's like heaven in your mouth. You can serve it immediately if you want, but it would taste even better if you refrigerate it and serve it 24h after.

SPONGE CAKE 

3 eggs
90g sugar
90g flour
3,5g baking powder

Preheat the oven to 170°C
Place the eggs white and the sugar in the Cook Expert stainless steel bowl fitted with the eggs whisk (remove the cap)
Launch EXPERT / 5 min / SPEED 5 / 0°C
Add the egg yolks in the bowl
Launch EXPERT / 10 sec / SPEED 3 / 0°C
Add the flour and the baking powder
Launch EXPERT / 10 sec / SPEED 3 / 0°C
Grease a non spill baking sheet
Spread the cake in the baking sheet with a spatula
Bake the sponge cake for 15 min
Cool on a wire rack
Using a pastry circle cut two discs (20cm), and two half discs to have a three-layer cake

WHIPPED CREAM 

500ml semi thick whole cream 30% fat (or whipping cream 35%)
50g icing sugar
2g vanilla caviar (or 1 vanilla pod)

Place the Cook Expert stainless steel bowl and the egg whisk in the fridge for 30 min
Place the semi thick whole cream in the freezer for 5 min

Place the semi thick whole cream in the Cook Expert stainless steel bowl
Launch EXPERT / 2 min / SPEED 7 / 0°C
Add the icing sugar and the vanilla
Launch EXPERT / 2 min / SPEED 7 / 0°C

ASSEMBLE

250g strawberries
Raspberry & rose syrup

Slice 200 g of  strawberries 7 mm thick
Keep 100 g for decoration
Set a bottom layer on a plate
Brush the raspberry & rose syrup on the bottom layer
Spread a layer of whipped cream and put half of the sliced strawberries
Add the two half disc to make a second layer cake
Brush the raspberry & rose syrup on the second layer
Spread a layer of whipped cream and put the other half of the sliced strawberries
Add the last layer cake on the top
Spread the rest of the whipped cream to completely cover the top and sides of the cake
Decorate your cake with the strawberries
Let it cool 24h in the fridge before serving
